Noa's Journal 07/5-13


Because I want to be able to show this to my boyfriend to let him take part in my progress, I'll actually keep this journal in English. If people write, I might reply in Swedish but my actual journal entries will be in English ^_^ Sorry if ya'll think I'm weird for doing it like this!


Well... today, I had my last sinful delight in the form of a chocolate ball, which is one of my absolute favorite indulgences.
Today, I also had my first LCHF meal, which consisted of delicious brussel sprouts with melted butter! I looove brussel sprouts and had some in the freezer, so yay =D

I'm a bit worried going in to this right now, because my fridge is broken and I have no idea when it will get fixed. As a result, I'm not sure when I'll be able to efficiently store vegetables and such at home. Right now I'm using a small cooler bag, but I can't fit that many products into it and I doubt vegetables would stay fresh in there...

A couple of days ago, I wrote down meal plans/suggestions for myself, and color coded each meal depending on if it's dairy/vegetable based, protein based, or fat/butter based.
I also divided the meals into groups of 1, 2 or 3, to avoid for example having three dairy based meals in one day. So if the breakfast meals in group 1 contain cream, the lunch meals based on cream have a different number etc.

With my broken fridge in mind, I took out some of the meals in a seperate document to use as a starting point until the fridge is working again.
This is a rough draft from my "Broken Fridge Meal Plans":

brysselkål, bearnaisesås m filéer, lax

 

Those are all things I can keep in my cooler, or in my freezer. I can't have things such as vegetables or eggs right now... I hope this will still work, because I'm really eager to get started!

I'll add my color coded and number grouped meal plan as an attatchment to this post, for those who are interested in seeing it! ^_^ 
Along with the actual meals, I also added some general food suggestions at the bottom of the document, to give myself some inspiration. Everything I wrote in the bottom part of the document was inspired from "Kostdoktorn" and his advice ^_^


Well.. I guess that's it for now... I will weigh and measure myself tomorrow morning, and use that as my "starting weight" for this journal. After my "weigh-in", I will go and buy the groceries I'll be needing to get this started and I'm reaaaally craving for some cream with berries right now!!! Blueberries/redberries will likely be the best ones since raspberries and strawberries tend to not last as long... fridge issue again.. But yeah, I love all kinds of berries so I'm sure that'll be a wonderful start! =)

One of my hopes with LCHF is that it will make noticable difference both in my weight and my focus and energy etc... and that that will inspire my mother to try it as well. I just worry so much about her health, and I really hope that this will work well for me so that maybe She will try it as well, and maybe for the first time in 26 years, she could get back to a weight she'd be happy with, and have more energy, and less problems in general both physically and otherwise...

Day 1


Weight: 70kg

BMI: 23.7




I've just had my first breakfast consisting of whipped cream and blueberries and redberries ^^
At first I felt like I still wasn't really full and could eat more.. I guess I still Could eat more, but now after 5 minutes I feel a lot more full from the cream. Hopefully it will last for a couple of hours.

I had my first LCHF trip to the grocery store, keeping in mind I can't buy lots of fresh produce until my fridge has been repaired. Despite that, I did buy eggs... I'll make "oopsies" (LCHF bread) with them, so I figured they'll last until then anyway!
Other than that, I bought spinach, quorn filéts, cheese, chevré, philadelphia, fiberhusk, salmon, and avokados... I wanted to buy bearnaise sauce, but the store bought ones had sugar in them so.. I guess I'll find out how to make my own.

I'm not entirely sure what to drink though, since I can't have juice anymore. I've been contemplating the whole milk thing. Because it Does have less than 5g carbs per 100g, yet it's still adviced against? I'll have to ask around a bit more about that... And at the same time, there is berry juice which has twice as many carbs as milk, but since berries are okay.... again - a bit bewildered! I guess I'll learn more as time progresses ^_^

It seems you are a vegetarian, so ordinary lchf recommendations will not apply to you, but you will probably find good substitutes.

About milk and berries, the reason there's a reservation on milk is that even if it's only 5% carbs, it will very fast amount to a lot of carbs, since one glass of milk (2 dl) equals 10 grams of carbs.
Some berries are pretty ok, around or just over 5% carbs (blueberrys, raspberrys etc.), but most of them are much higher in carbs so do not base your diet on these, use them only as extras in small amounts.

Indeed, I am! Or well "pesco-vegetarian" I guess is the technical term, since I eat fish and other seafood.

Thanks for helping explain the berries vs milk thing! I asked around a bit earlier about the same thing and got the same reply as you said (though you said it in a friendlier way ^^; )

Hm.. I'll look into more specific kinds of berries, since I hope to at least eat them once per week, or maybe twice now in the beginning. I absolutely love blueberries though so that's a good place to start =D (I won't overeat or anything, I always eat quite small portions, before and during LCHF)

Hm.. let's see.. what have I eaten today?

Well, I started the day with bluberries+redberries with whipped cream. probably about 1,5dl cream + 70g blueberries and 60g redberries.

Later I haaad... oh! Kale soup with an egg. Not a very large porion... maybe 60% of my bowl.. like... 200g-250g?

I've also munched on some cashew nuts during the day, probably up to about 200g, but I now realize that they're probably the worst LCHF nut so I should find another snack @_@

Aaaand.. I had some paprika (maybe 30g), along with 100g chevré cheese... And I think that's about it!

I still won't sleep for another couple of hours, so I'm guessing I'll have some tea with cream and maybe a tiny yet-to-be-decided snack before my day comes to an end.

Today, I made my first oopsies! ^_^
Really awesome, using it the same way I would bread =) Butter and cheese ontop~ 
And I managed to make it really really fluffy so I'm totally proud of myself! ^o^
I thank my previous knowledge in sufflé-making for my oopsies' fluffyness xD

Todays food intake:

An avokado and some scrambled eggs for breakfast.

Later I had cream with berries again (had company over and they wanted to eat something that I could eat too, while we watched a movie)
 

Aaand now I've had two oopsies with butter and cheese =)

And I bought a new kind of tea, which has a bit of a fresher flavor so that I won't miss having sugar in it. I picked a really nice kind of tea, apparently ^_^

All in all, today was a very good day.

Side note: My mother actually started on LHCF with me, I'm sooo excited about that!
I'm a bit worried that she might eat bread at work or want candy etc.. but for now, she hasn't cheated at all and she seems to be positive towards our new diet, despite her being very sceptical about it ^_^
I almost always do the grocery shopping anyway, so I can make sure we don't have carbs at home. =)

My Wonderful, Thoughtful, Adorable Boyfriend sent me Korean snacks!

He didn't know about my diet yet, because we can't talk very often right now when he's in the army.
But I loooove these snacks!

In the whole box is 40g carbs and 300calories.. So if I eat about three pieces per day, it should be fine, I think ^^

Oh oh oh, I forgot to write yesterday. So this post will be pretty long, to cover both yesterday and today!


Yesterday's meals (let's see if I can remember...)

One oopsie with philadelphia, plus a boiled egg.

Three Melon Kanchos (Korean snack), 

Mixed Thai food thing... Quorn pieces in a thai sauce, basically ^_^

Fried in coconut fat, with some creme freishe and cream added to a finished thai mix that I bought (after checking the carbs)
So delicious, though probably more carbs than any of my other meals~

And then... um.. ah! Peanuts! About one-two handfulls of peanuts (salted, I dno if that matters)
But seriously, peanuts should be one of the best LCHF nuts, right?? Not That many carbs, while being high in fat and also contain protein.


Today, I had:

Two  Melon Kanchos <3

A boiled egg for breakfast.
I tried to eat some avokado-creme freishe-cream mix, but it tasted pretty crappy because 1) the avokado was too hard 2) I tried to have a shrimp sallad in it, but since the fridge is broken the shrimp sallad had gone bad already.

Then I had the Thai stew mix thing again ^_^

Theeen... tea with stevia, but I accidently used too much stevia xD

Now I'm thinking about eating some more peanuts, or almonds =)

As a side note... I got to talk to my Angel for Three hours today!!! Actually a bit more, but I was half asleep when we first started talking a bit xD So three hours while I was actually awake <3

I wonder if I may be eating a bit too little??

Since I'm used to be nearer 1000 calories than 2000 calories, I'm not used to eating a lot...

I had started eating 5 times per day to reach 1800 calories before I was on LCHF, but now I seem to be back to 3 times per day, irregularly... hm....

Oh, and regarding my weigh-ins, I'll probably only weigh myself once or twice per week. This is because I'm scared if I weigh myself within a week, it might say that I've gained something and that'll freak me out too much and mess with my head and thus mess with my diet. So I hope after one week, there will be a better result than there would be earlier =)

Yesterday's food intake:

Two Kancho!

For breakfast/lunch I had some cheese (40g) with half a red bellpepper (paprika), aand a bit later I had a boiled egg.

Then I made oven baked salmon, with mashed cauliflower (blomkålsmos) for dinner...

And throughout the day I ate nuts. I'd say about 100g paranuts, and another 50g of almonds and hazelnuts.

Before sleeping, I ate another kancho ^^

I don't really remember if I ate anything else! I wrote everything down in my food journal online, but the site is down at the moment so I can't go back and check ^^;;

I felt very tired and light-headed/faint/dizzy yesterday. I checked the forums and it says it might be a transition symptom thing, and if it keeps persisting I should eat a few carrots basically. We'll see how it goes!


On another note, I'm a bit worried about my mother. She's on LCHF, technically.. but at the same time she thinks LCHF is ridiculous and doesn't really care about it, but rather tries to cut back on fat and still drink milk etc. I'm trying to tell her that if she eats both carbs And fat, she will gain weight. She shrugs it off in an "I'm a doctor, I read about this in the 70s and work with health for a living, so I obviously know more than you and others about what effect what has on one's body"- kind of attitude... it's really really frustrating for me, because I doubt she'll have any weight loss results if she cuts back on fat while being casual with the carbs. =\

Yeah.. unfortunately, she doesn't care what I tell her or show her, as long as it's coming from me, she's convinced it's wrong and she knows better -.-' Even if I lead her to published findings etc.

 

Hopefully she'll find out through a tv show or something without my telling her first.

Aand mom just ate a portion of lasagne (pasta) while drinking milk....

She's obviously going to gain weight because now she's eating the fatty foods that are allowed by LCHF, without caring about skipping the carbs... Carbs + Fat.. great idea. 

Sigh.. I give up. I can't be a parent to her, she won't listen anyway =\

Today's intake:

One Kancho.

For breakfast I had two boiled eggs.

For lunch I had a little bit of smoked salmon with some crabsallad and creme fraiche (about 30ml).

For dinner, I made Seed-hardbread-thingies... Fröknäcke <.<
I ate one with a piece of smoked salmon and one with some creme cheese.

During the day I snacked on about 30g peanuts, and 70g paranuts.

I'll probably drink some tea and eat one more kancho before going to bed~

Today I officially started intermittent fasting.
 

Today I'm doing the 16/8 version for convenience (I eat 8 hours, fast for 16 hours) and am currently eating my last meal of the day.
Today's eating window was from 14:00-22:00. I'm combining it with LCHF, but now feel I can be a bit more at ease and let the fast do some of the work, meaning.. I'm eating cream a lot today ^^;;

However, doing the 16/8 version is not my intention. I would prefer to only eat between 14-20 and thus do 18/6 instead. I'll aim for that tomorrow =)



Today I've had:

An avokado

Quorn strips fried in coconut milk, creme fraiche, with some general spices... (Yes, I love dairy products. I can't help it :wub: )

And now I'm having raspberries, blackberries and whipped cream. (dairyyyyy!)

And that's all I'll have today. I was worried that I ate too little before 20:00, that's why I extended the time to 22:00 today. But tomorrow I'll try to squeeze more food into the 6 hour window~

I didn't have a kancho yet today! I guess I might have a few tomorrow instead =)

I also started keeping a food journal (yay phone app! xD)

Today I'm at about 1600calories, 131g fat, 46g protein, and 40 carbs (a lot for LCHF, but... I'm not on strict LCHF.. unless I've gained a lot of weight by tomorrow, then I'll cut back a bit.

Though if I've gained weight, it might just be because I've gone from taking in 1000 calories per day, to trying to double it... or at least increase it by a third. ^^;;

Day 7



Weight: 68.2kg

This past week I've lost 1.8kg!! ^_^

I don't know if it's just because it's the first week, waterweight etc, but I'm still sooo happy!

I've actually Felt the change weight wise, like I don't feel like my stomach is as fat... though I've thought maybe I'm imagining it... I guess not! ^^

I didn't weigh myself all week, until today. Because I was a bit worried of a bad result, which would demotivate me. So I gave it more time to take effect =)

I've also completed my first day of fasting, so we'll see where I'm at next week after a "liberal LCHF" combined with 16/8-18/6 fasting. =)

I'll have my breakfast (brunch xD) after finishing this post~

Oh and I also started working out again, after a few weeks' hiatus.
I'll not focus on cardio that much right now, but before breakfast I'll do situps, side-situps, and two thigh/butt exercises.
I heard that in combination with intermittent fasting, it gives really nice results =)

Food:

Three (not very big) seed-hardbread/fröknäcke with smoked salmon for breakfast =)

Cream with berries for lunch (I know I had this yesterday, but it had to be eaten or thrown out)

Aand the same quorn-strip coconut milk mix as yesterday (leftovers) ^_^


Fasting:

I ended up doing the 16/8 again, because again I found that I had eaten too little by the time it was 8pm. I should be fasting, not starving.

I had only eaten about 800 calories by 8pm, so I needed one more meal to double the day's intake. 

I need to figure out a way to eat more within a shorter ammount of time, without feeling Too Full...



Nutritional info:

Today I've had about 1700calories, 161g fat, 51g protein aand 27g carbs! =D

Food:

Some cottage cheese (about 150g), and an avokado for breakfast

No lunch...

Oven-baked Salmon (145g), quorn filé (80g), some creme fraiche (0.5dl), aaand bearnaise sauce (just below 1dl) ^_^

Now I'm primarily just thirsty... I'll drink some water, and make tea! =)


Fasting:

My eating window today was 4pm-8pm, and I stuck to that =)

It was supposed to be 2pm-8pm, but... I kept talking to my Gwangyeong from 1pm until like 6pm, so food wasn't really on my mind xD;


Nutritional info:

Today I've had about 1400calories, 109g fat, 61g protein, and 18g carbs

Yeah it was nice! Especially with salmon ontop =)

However, I think they'll taste better with another oil maybe ^^ I'll try again another time =)

 

Yeah you need a neutral oil. I think I actually switched to using ordinary rapsoil instead of cold-pressed. The cold-pressed has a distinct taste. When you use coconut oil, use the one without coconut taste.

Agreed ^_^ I'll get a new kind of oil, coconut or otherwise, before I make them again =) But they were still very good with the right topping!

Food:

For breakfast I had smoked salmon with creme fraiche... medium sized dish~

I skipped lunch, too busy skyping with my Angel ^_^

For dinner I had two quorn filéts with bearnaise sauce, and some brusselsprouts =)

I also had maybe 50g paranuts after breakfast~


Fasting:

Eating window 14:00-22:00~
It's going fine. But I wonder if it matters that I change the window's lenght every now and then... Like, does it effect the result?
I'm a bit nervous about next week's weigh-in... I hope it'll still go well, but I'm trying both fasting and working out as new things this week so I have no idea what the scale will say...
I know most LCHF:ers say that the scale doesn't matter, and even if it physically doesn't - for me it does, mentally.


Nutritional info:

1400calories, 117g fat, 55g protein, 20g carbs.

First of all.. today was Eurovision! Yay! ^^ Tho I'm STILL Pissed Off that we didn't get to choose our own damn representative.. Fkin ridiculous. It's a nice song, it's a great guy, but it's not who we voted for. Just sayin'.
Waste of money to vote at all =\ 

Anyway, because of the Eurovision I was definitely Not strict today!

I actually Tried very hard to stuff my face with large ammounts of food but somehow I failed... I tried so hard! And I just came up to about 1500calories, wtf??


Food:

Two eggs and 50g paranuts for breakfast.

Mashed cauliflower and crabsallad wrapped in smoked salmon for lunch.

Berries and cream for snack.

Then I spent the rest of the night dipping cucumber, cauliflower and yellow bellpeppers in a home made dipping sauce from sourcream and spices.

Right now I'm stubbornly trying to stuff my face by eating more nuts of various kinds...


Fasting:

No fasting today. I've been fasting between 16-20hrs per day since tuesday, so tonight was a break from fasting due to the Eurovision song contest =)
Starting again tomorrow.


Nutritional Info:

Thus far only flipping 1500calories, but I'm eagerly trying to get it higher for once... *eats more nuts*... aand 120g fat, 45g protein, aand like 45 carbs.

All of this will increase as I'm eating nuts but I'm not gonna add those to the count tonight. So yeah~!

Ugh.. ok.. To neglect your Own health is one thing. Don't give a damn about your own body, fine. But when -I'm- really trying hard to take care of myself, and am trying various methods to do so (such as intermittent fasting), don't friggin pick on me about it! If I need to eat before 10pm and therefore don't have time to make one dinner for someone else first, followed by my own dinner, and then have time to eat as well... then maybe you should wait til after I've eaten before I start your dinner, or you could go along with eating something that's quicker to make so I have time to make it. But don't friggin yell at me about not making Two dinners instantly becuse I'm on a timed meal schedule. Make your own damn food then...

I still think I might be eating a bit too little.. but I'm used to eating so little, I'm not sure how to increase my intake a lot @_@


Food:

I had a quorn filét and some veggie thingies with bearnaise sauce for breakfast.

No lunch, because today's eating window was very small to compensate for my Eurovisioning yesterday ^_^

For dinner I had a quorn strips + veggie bacon fried in a creamy spiced sauce thing... ^_^


Fasting:

Today my eating window was between 18:00-22:00, worked fine.
I wonder if it matters that I change my eating window often... Does it??
Hopefully the fact that I do fast every day for at least 16 hrs, up to 20 hrs, is what matters.


Nutritional Info:

1300calories, 109grams fat, 46grams protein, and 24carbs.

juust a quick update~ as u can tell, i haven't really been on a lot. it's primarily because i'm just busy with other things and i don't have time to write down everything i eat and organize it in a post right now ^^; I need to complete my studies and prepare for my trip to korea =) 
but anyway the update is that I'm now at 67kilos ^_^
